Sayatsuki Kurikogatana Migi, japanese carving knife
This a particularly sharp Japanese knife that can be used to accomplish many tasks in the workshop. For example, it can be used to quickly carve out material at the end of a round leg to prepare for a wedge, or to make chamfers on edges along and across the grain.
Made of traditional white paper carbon steel, it is easy to sharpen. It is small and portable, making it perfect for carrying with you in the apron to perform all sorts of quick and precise cuts.
This is as razor sharp as a Japanese sushi knife, so care must be taken when handling this knife.
